Flamegrilled Beef Short Rib with Creamy Mushroom Mealie Rice

This grilled meat dish can be pre-made making it ideal for big events and dinner service. Flavour is added to the meat with Royco Beef Marinade and open flame cooking. Serve on a creamy mealie rice.

Ingredients

  • 5 kg beef short ribs
  • 500 g Royco Beef Marinade
  • 1 bunch fresh rosemary, finely chopped
  • 10 Garlic cloves, crushed
  • Salt and pepper to season

For Creamy Mushroom Mealie Rice

  • 10 cups mealie rice
  • 500 ml cooking oil
  • 5 large red onions, finely chopped
  • 3 -4 liters of water
  • 5 packets button mushrooms, chopped
  • 250 g Royco Cream of Mushroom Soup
  • 250 g butter
  • Salt and pepper to season

Method

  1. Marinate Beef Short Ribs using a mixture of ROYCO Beef Marinade, fresh rosemary, garlic cloves and oil over night to infuse all the flavours. When ready, slowly grill on open flame or coals and keep basting with remaining marinade until well cooked to a preferred level of meat doneness and set aside to rest covered.
  2. Cook mealie rice according to packet instructions, in a separate sauce pan fry onions and mushrooms for about 5 minutes until soft and cooked through. Add Cream of Mushroom Soup and stir well to combine, for a creamy consistency.
  3. Add creamy mixture into the cooked mealie rice, stir to combine and cook further, for about 10 minutes. Add butter and season with salt and pepper to taste.
  4. When cooked slice and portion beef short ribs and serve with creamy mealie rice as desired.
