Hearty Beef Hot Pot
Top Tip: This beefy recipe can also be cooked as a potjie over the coals instead of on the stove top. It's a great way to cook for a crowd.

Replace the beef in this recipe with whole button mushrooms for a hearty vegetarian version.

Ingredients
- 500g beef short ribs
- 1 packet Royco® Beef Hot Pot Wet Cook-in Sauce
- 1 chopped onion
- 1 roughly chopped red pepper
- 1 cup of roughly chopped zucchini
- 1 diced potato
- A sprig of thyme
- A crushed garlic clove
- 500ml of water
- 30ml of olive oil
Method
- Brown the meat well in the olive oil.
- Add the garlic and onion and stir continuously.
- Add in all the veggies and the Royco® Beef Hot Pot Wet Cook-in Sauce and let it simmer partially covered until the meat is tender.
- Serve with mash or pap.
